Hostess Cupcakes

I made my own Hostess cupcakes! I took the majority of them to work to share with my peeps but I personalized a few of them for us at home. I was pretty happy with the cupcakes but I think I can find a better cake recipe. The cake was a little dry and crumbly. I think the marshmallow creme and rich ganache deserve a better cake.

Irish Hand Pies

Martha sent me an email right before St. Patrick's Day for some Irish handpies. They were good. I didn't think I could go wrong with some of my favorite foods in pie crust :) Cabbage, red potatoes, beef, thyme, tomatoes.

I didn't get a picture of them after I baked them. I ended up shaping the pies and flash freezing them for later meals. They were wrapped, frozen, and then baked frozen for 30 minutes.

Spring Chicken Pot Pie

This has become one of our favorite meals. It is meant to use spring vegetables like asparagus, leeks, carrots, etc. It is so nice to eat this- it truly tastes like home cooking. Now I just need to find THE perfect pie crust recipe so it's truly homemade. I used a refrigerated (processed) pie crust from the grocery store. It tastes good, but it just doesn't cut it for me!

Comfort foods

For dinner we had Mozzarella stuffed turkey meatloaf, homemade macaroni and cheese, and salad. James refused it all :(

This is an easy meatloaf if you have an hour to wait for it to bake. I love that it includes spinach!

Also, the macaroni and cheese recipe makes TONS. I can usually freeze portions of it and bake them later.

Southwestern Eggrolls

Tonight I experimented with Southwestern Eggrolls. I liked that they are baked and not fried. Next time I would try the more traditional Asian filling, but they were good. It's nice to try new things. (I wish my three year old son could read that.)
